Series 03

Air Out, Air In

Hoods, ducts and make-up air. Most of what gets blamed on a hood was decided by the duct behind it.

Ventilation is the part of a kitchen that is designed last and complained about first. A hood is specified for the range, then the duct is routed around whatever the framing allows, then the house is tightened until the hood has nothing to pull. By the time anyone notices, the cabinetry is in.

This series takes the airway as one system, from the burner to the outside wall and back again through make-up air. It is written for the stage where the route can still be changed — and it says plainly where a question belongs to the mechanical contractor and the authority having jurisdiction rather than to us.
