The opening a wall oven sits in was cut once, usually to a dimension taken off a brochure rather than off the installation instructions for the model that actually arrived. Where it is tight, the unit cannot come out without the trim or a scribe strip coming off first, and on a flush-inset installation it may not come out at all until the surround is unpicked. That is time, and it belongs in the estimate rather than in the surprise.
Altitude changes the baking before it changes the oven
Water boils below 212°F at this elevation, so batters set differently and a recipe written at sea level genuinely comes out wrong. Plenty of perfectly calibrated ovens are called in for that. Measuring the real cavity temperature through a full cycle separates an offset that needs correcting from a mile of thin air, and only one of those is a repair.
