Measure the stair, not the kitchen
On a slot home the kitchen is upstairs and everything that has to reach it goes up a stair that turns. A replacement door, a compressor, a hood blower assembly: each is a different shape and each meets that turn differently. If you know the narrowest point on the route, say so when you book. Where a unit genuinely cannot come down, the work is planned around servicing it in place, which is a different visit with a different length.
Victorian walls are not stud walls
The restored houses on these streets are plaster over brick, and anything hanging on a wall is anchored into masonry rather than into framing. That matters most for ventilation: a hood that has loosened at its fixings has usually pulled its anchors out of old mortar, and refixing it properly means new anchors in sound brick, not longer screws into the same holes.
The kitchen that moved during the remodel
Plenty of houses here have had the kitchen shifted to a different wall, or to a different floor, during a rebuild. When that happens the gas, the drain and the vent follow the shortest legal route rather than the best one, and the appliance at the end of them inherits whatever that route costs in pressure, drainage or airflow. Knowing the kitchen has moved is often the first real clue on a call.
